Prosciutto Cotto Pizza with Pesto & Spring Garlic
MAKES 2 (12- TO 14-INCH) PIZZAS OR 4 PERSONAL PIZZAS
Tender spring garlic (the young plant, picked before the bulb has formed) has a mellow beauty worth showcasing. It’s one of the harbingers of spring at the farmers’ market, and paired with prosciutto cotto, it makes for a seasonal garlic–lovers pizza that’s a cut above.
PREP TIME: 10 minutes
COOK TIME: 20 minutes
TOTAL TIME: 35 minutes
Cornmeal or flour, for dusting, or extra-virgin olive oil, for brushing
Simply Amazing Pizza Dough (here)
4 stalks spring garlic or ramps, white and light green parts finely chopped, or 2 garlic cloves, sliced thin
¾ cup Basil Pesto (here)
½ pound fresh mozzarella cheese, shredded or cut into small pieces
¾ cup fresh ricotta cheese
¼ pound prosciutto cotto or Virginia ham, chopped into bite-size pieces
⅛ teaspoon salt
⅛ teaspoon freshly ground black pepper
1 Preheat the oven and pizza stone (if using) to 500°F. Dust a pizza peel with cornmeal (if using a pizza stone), or brush two baking sheets with olive oil.
2 Roll out one of the dough balls to the desired size, and place it on the pizza peel (if using a pizza stone) or on the prepared baking sheet.
3 Sprinkle half of the spring garlic over the dough, then spread half of the Basil Pesto on top evenly. Sprinkle on half of the mozzarella, dot the pizza with half of the ricotta, and finish with half of the ham.
4 Transfer the pizza to the hot pizza stone or oven rack, and bake until the crust is golden and the cheese has melted, 5 to 7 minutes on the pizza stone or 7 to 10 minutes on the baking sheet.
5 Remove the pizza from the oven and transfer it to a cutting board. Let it rest for 5 minutes, then season with the salt and pepper. Slice and serve.
6 Repeat with the remaining dough ball and toppings.
A CLOSER LOOK: Prosciutto cotto, a cooked Italian ham, is a stand-out in sandwiches, panini, and this delicious pizza. If prosciutto cotto isn’t available, any good-quality sliced ham will work.
